Lightly coat a large baking sheet with cooking spray; set aside. Cut chicken lengthwise into 12 strips. Sprinkle lightly with salt.

In a shallow dish combine egg whites, the water, and the lemon peel. In another shallow dish stir together breading and cheese. Dip chicken strips into egg white mixture, then into breading mixture, turning to coat. Arrange strips on the prepared baking sheet. Lightly coat with additional cooking spray.

Bake about 15 minutes or until chicken is done turning once halfway through baking.
