Heat J.T.M General Tso Sauce in a steamer or hot water bath Heat approximately 30 minutes or until product reaches serving temperature. control point 145ºF or higher

Beef:

Preheat oven to 350*F

Line full size sheet pan with parchment paper

Distribute seasoned beef evenly on parchment lined sheet pan

Bake for 8-10 minutes until product reaches serving temperature(control point 140*F for 15 seconds

Broccoli:

Preheat oven to 100% steam

Place vegetable in a 2” slotted pan over a closed 2” pan

Steam vegetables until they reach serving temperature. control point 140*F or higher
Rice:

Follow recipe #630 Grains to prepare brown rice.
Assembly:

As student come through the line place ½ cup of rice using a #8 scoop on the tray.

Place 2/3 cup of chicken on top of the rice using a #6 scoop
