Directions:  
Heat oil in large fry pan, stir fry cut up chicken and add veg after chicken is almost cooked thru. Stir fry till almost tender then add all except rice.
Stir fry the rice in separate pan with the oil and add to above mixture.

You can use any veg mixture you like, I also use brocolli, celery and onion.
