Directions:  
Finely chop onion, celery, and carrots. Dice green pepper, mushrooms, and parsley. In large bowl, mix turkey, spices, and vegetables. Form into loaf in place on baking sheet. Brush or spray with coconut oil. Bake in 350º oven, 50-55 minutes, until center registers 165º. Let stand 10 minutes before slicing.
