Directions:  
In a large dutch oven, add oil and fresh veg, cook till translucent.
You can cook 1/4 cup quinoa in 1 cup water for 15 min for one cup quinoa.
Add the garlic and spices and cook for one min. Add 2 tsp chipolte powder as well, it wouldn't accept this ingred above.
Add the remaining ingred and heat till desired doneness, as early as 10 min.
