Directions:
Grate orange rind, and then juice the orange. Whisk together orange juice, orange rind, chipotle pepper, garlic thyme and salt in a bowl. Add half of marinade to chicken in a zip-top plastic bag. Seal bag, and toss to coat; reserve remaining marinade for basting. Marinate chicken in refrigerator 30 minutes. Preheat grill or grill pan over medium-high heat. Remove chicken from marinade. Add chicken to grill rack rubbed with oil. Grill 20-25 minutes, turning and basting occasionally, or until juices run clean and chicken is done. Let stand 10 minutes before serving. Cook rice according to package directions, adding tumeric and pepper. Heat oil in a saucepan over medium-high heat; add garlic and onion. Saute' 3 minutes or until tender; add black beans. Heat until warm.
