Directions:  
Saute' spinach in butter, until wilted. Sprinkle with salt & pepper. Drain through sieve, to remove excess moisture. Poach eggs. Heat lobster in microwave. Also, heat sauce in microwave. Top each toasted half of muffin with spinach, then lobster, egg and top with sauce.
