Beat egg beaters, egg whites, and egg together.

Spray small omelet pan with canola spray and heat over medium heat.

Put 1 ladle of mixture into preheated pan, add sliced mushrooms and cook over medium heat, lifting edges to cook.

Turn over and cook on other side. Turn over again, fold in half and move to rack, cool, and stack in container.**

Reheat in microwave for 45 seconds to 1 minute as needed. **I put cooled omelets in a glad 2.5 oz square container with cover, alternating rounded edges into corners. I usually add 2/3 cup fresh spinach before reheating and increase time by 15-20 seconds. **Changed 6/17/18**
