Preheat oven to 350 degrees F. and butter a 9x13 inch baking dish.

Toss nuts in cinnamon. Unroll phyllo dough and cut the whole stack in half to fit in the baking dish. Cover phyllo with a damp cloth while assembling baklava to keep the dough from drying out.

Place 2 phyllo sheets in the bottom of the baking dish. Brush generously with butter and top with 2 to 3 tablespoons of the nut and cinnamon mixture. Repeat with ingredients until the baking dish is full.

Using a knife, cut the baklava all the way through, into 4 long rows and then diagonally to make 36 diamond shapes. Bake for 50 minutes.

Meanwhile, combine sugar and water in a small saucepan over medium heat, bringing the mixture to a boil. Stir in honey, vanilla and lemon zest. Reduce heat to a simmer for 20 minutes.

Remove baklava from the oven and immediately spoon syrup over the top. Let cool before serving.
