Directions:  
Place pepper slices on parchment-lined baking pan. Bake at 400ยบ about 10 minutes. Saute' potatoes and onion, salt and pepper. Mix with eggs. Stuff peppers with egg mixture. Bake about 10 minutes, or until set. Serve with strawberries.
