Clean and trim chicken of all visible fat.
Pound chicken until 1/2 inch thick.
In a small bowl, combine mayo, mustard, pepper and paprika.
Place chicken in microwave-safe baking dish.
Coat one side of chicken with mayo mixture and microwave on high for 3 minutes.
Turn chicken over and coat other side. Cook for an additional 3 minutes or until chicken is no longer pink.
Sprinkle with chopped parsley.
