Mix the peppers, corn, beans, and onion in a large bowl. Add the cilantro, lime juice, olive oil and spices; Mix well. Carefully stir in the avocado and serve chilled. You can make this ahead of time, but I’d recommend adding the avocado at the last moment.

This sweet and spicy cold salsa goes well with tacos, fajitas, chips, or just by itself! In my opinion, it’s almost better the next day, as all the spices and flavors have time to mix together. Enjoy!
