Directions:  
Dice all vegetables.
Cook onion and peppers in one Tablespoon olive oil until softened. About 7 minutes.
Add mushrooms. cook until softened.
Add tomatoes and beans.
Add spices to taste.

I do not add salt as the canned goods I used are already salted.

Allow to simmer slowly until you reach the stage of serving. Then add pre-cooked lentils. If they are added too soon, they will turn to mush. They will thicken up the chili as they heat up.
