Heat oven to 450 degrees and spray a roasting pan with canola oil.

Slice tomatoes lengthwise in large pieces, seed, place in single layer in pan, and drizzle with olive oil.

Roast at 450 degrees for 30-45 minutes until caramelized, stirring every 10-15 minutes.
