Directions:  
1,Bring a large pot of lightly salted water to a boil. Add penne pasta, cook for 11 minutes, then drain. Lightly grease a medium casserole dish.

2. Preheat oven to 350 degrees F (175 degrees C). Thoroughly mix parmesan cheese and bread crumbs.

3. Heat oil in skillet over medium heat. Saute onion until softened. Mix in zucchini, tomato, garlic and spices. Cook until zucchini is tender.

4. Combine pasta, vegetable mixture and mozarella cheese. Top with parmesan / bread crumb mixture

5. Bake 25 minutes, until topping lightly browned. Allow to rest 5 minutes before serving.
