Place the potatoes in a large pot of water and bring to a boil. Reduce heat, cover, and simmer 15 minutes.

Whisk together the herbs, mustard, lemon juice, salt, and olive oil in a medium bowl; set aside.

Remove the potatoes. Cut them in half when they are cool to touch. Arrange the lettuce, potatoes, and green beans on each plate. Top each with tuna, eggs, and olives. Drizzle with the dressing. Serve.
