Directions:  
Bring quinoe and water to a boil, reduce to simmer and cook covered untill all the water is absorbed, about 20 minutes. Dice all the vegatbles into 1/8th inch dice, finely chopo nion. Mix diced vegtables and onion togther in a bowl. Add cooled quinoe and mix well. Add choped almonds and cranberries and mix well. Drizzle with balsamic vineger and mix well. Salt and pepper to taste. Refrigerate untill ready to serve. This can be made a day ahead as it will keep refrigerated for up to 5 days
