Boil chicken in 1 quart of chicken broth until chicken is very tender at least 30 minutes. I did not include chicken broth in the ingredient list because you do not consume it.

Remove chicken from broth and allow to cool just enough top be able to handle. You want the chicken to still be warm when you mix with the dressing.
3.While chicken is cooling, mix mayo, vinegar, oil, onion,salt and pepper in a bowl large enough to hold all chicken.

Chop chicken in very small pieces and toss in dressing.

You can cut the calories by using low fat mayo. I didn't have any on hand. I keep this recipe simple because my kids will eat it. You could add celery or pecans.
