Cook 1 box of quinoa according to instructions
2)Cut 1 cucumber and 1 red pepper into cubes, 2 green onions into small slices

Make dressing; mix together: 2 TBSP of olive oil, juice from 1 lemon, salt and pepper, 2 tsp of saffron and 1 tsp of curry

Add cooked quinoa to vegetables, and stir in dressing
