Put dressing mix and Xantham gum in a tall container (or blender). Use a little more or less Xantham gum depending on how thick you like your dressing.

Add oil, water and vinegar. Mix well.

With a stick blender, or standard blender where you can add liquid ingredients, Slowly pour the oil while blending on high speed. Dressing will thicken as oil is added. Store in jar in refrigerator.
