Directions:  
Put quinoa in water to simmer for 15 min.
Chop up all veg except avacado, put on sheet pan and toss with olive oil.
Bake at 350 for 20 min. Stir at the 10 min mark.
Make the dressing, cool all ingredients and toss with chopped avocado and cilantro.
