Directions:  
cook cauliflower rice in avocado oil, stir in salsa (or diced tomatoes) place in a greased 9x13 pan
saute peppers and onions and place on top of the rice layer
Cook the lean ground beef, add taco seasoning and water and simmer 10 minutes. Place on top of the onion/ pepper layer. Top with shredded cheese.
Cook for 45 minutes at 375
