Rough weekend...

I didn't workout at all Friday, Saturday or Sunday!! Ugh! Our weekend was super busy but I know I still should have made time for my workouts! I feel a little guilty for slacking off but I will get back on track tonight! I'm still not going to get on the scale until Friday morning though... no sense in weiging myself and possibly seeing a gain after a weekend of not working out!
We're going to have a lot of crock-pot meals this week because our evenings are going to be too busy for me to cook after work! Luckily I have several low-fat crock pot recipes to use!! For dinner tonight we're having a crock-pot chicken & mushroom dish! I got it ready last night and it's cooking in the crock pot now!! I'll serve it over spaghetti with a salad and a piece of garlic toast. Super easy to make... low calories and low fat and so delicious!!
Crock pot chicken & mushrooms
4 large boneless skinless chicken breasts - cut into strips
1/2 yellow or white onion - chopped
8 oz. fat free italian dressing
2 pkgs. whole white mushrooms
Place chicken breasts in bottom of crock pot. Place chopped onions and whole mushrooms on top of chicken and pour the italian dressing over all of it. Cook on low 6-8 hours. Serve over cooked spaghetti or angel hair pasta. (this is also really good if you use portabella mushroom caps!)
1 serving is 3 oz. chicken, 6 whole mushrooms, 2 TBSP sauce served over 1/2 cup of cooked spaghetti:
