Extreme Measures

Getting through Christmas was hard - so much food! But we are now past that and I can get on with getting healthier! I am starting a diet called the GAPS diet. This diet was never intended for weight loss purposes. Instead the doctor that wrote the book (Dr. Campbell-McBride) devised this diet for those suffering from auto immune disorders. Initially it was for children who had autism and ADD and the like. But then the parents were doing the diet with their children and were being cured of things like MS and diabetes. She is in the process of revising her book to include all this.
I have suffered with severe eczema since I was 6 months old. I have so many allergies, I cannot eat out except for a handful of chain restaurants I know I am safe with. So her claims are very appealing to me. I want to be done with all these allergies. The weight loss that accompanies the diet is an added bonus! :)
In order to do the diet right, there is no cheating allowed. It is highly restrictive and takes a lot of time to make everything. So I am making certain foods now and freezing them to prepare for starting the diet (I plan to start in 10 days as that should give me plently of time to hoard food!). Right now I have 8 mason jars of chicken broth in my freezer, a bowl of cabbage fermenting on my counter to make saurkraut, and I plan to make yogurt today to use the yogurt whey to make the fermented veggies. There is nothing easy about this diet at all. It is extreme but not in the typical extreme way some diets can be. There is no calorie counting or food portions to figure out. I wll not be hungry on this diet - just craving the processed foods my body is addicted to.
