The last few days have been VERY busy! I have been doing a lot of food prep for my diet. I made a chicken and vegetable soup yesterday - I had simmered broth overnight with chicken bones. Then in the morning I strained the broth and set it back on the stove. I then chopped up 1/2 butternut squash, 1/2 onion, 1 broccoli head and one cauliflower head, along with about 10 baby carrots. I cooked these in the broth for about 40 minutes, then added shredded chicken (leftover from the chicken dinner the night before), and a few cloves of garlic. I let this cool as I cleaned the house. After it cooled I put portions of it in a blender and purreed it. I now have about 3-4 quarts of soup in my freezer ready to go on days I am not well enough to cook. :) Now mind you I do NOT like a few of those veggies - cauliflower and squash are completely gross and I am not fond of carrots. But very surprisingly the soup was very good!! Even my kids liked it! This diet may not be too bad after all!
Another preparation - I bought a few months supply of probiotics. These are essential to re-colonozing the gut wall after it starts to heal. These are not cheap at all and are an absolute must for this diet. Thankfully we had the money to upfront some of the costs of this diet. While I may be spending more money now, the way I look at it, I will be spending significantly less money in the future on health care. :)
Went for 2 short walks over the past 2 days - wish I could walk more - just need to make the time and commitment. Unfortunately I seem to be lacking in the time department. I am trying to do too much as always! :) Now I am off to work for the next 3 days - I work Thurs-Sat and hubby works Sun-Tues. This way we can still homeschool the kids and not need child care. But my 4 days off are crazy busy! I am praying for the day I can go back to bein a stay at home mom!
