2 Baked Beets
Garden grown rosemary/oregano
Onion
Fresh garlic
olive oil
goat cheese
Rye bread (preferred)
& a hard boiled egg on the side (can finger print a little design using the beet juice!)
With skin still on the beets, wrap the beets in foild and roast in a 400 degree oven for 1 hour. Let cool, unwrap and remove skin and slice to your liking. While oven is hot, spread goat cheese onto bread and broil for 5 minutes. On stove top, sautee in olive oil your fresh herbs/onions. Remove bread from oven and top with hot beets and delish sauteed goods and WAH LAH delicious meal. Don't forget to boil an egg for a little extra protein and a cute addition if you feel like getting artsy :)
