I made a traditional carrot cake with cream cheese frosting. I was so pleased with the shredding attachment I just bought for my Kitchen aid mixer. The carrots shredded into a perfect consistency that really enhanced the texture of the cake. I Iook forward to creating some slimming recipes with the new tools...but I had to just try one of my family's favorite recipes that I did by hand in the past before I had physical limitations. Silly I didn't invest in these tools before. Such a time saver and it allowed me to make a double layer cake, and two dozen cupcakes in under 2 hours. I had a sliver Monday and a slice this morning for breakfast, very indulgent and satisfying. Now to figure out the best slimming version of this traditional favorite. I know there will be some Greek yogurt in the next recipe...I just absolutely love that high protein, versatile food.
