Description: Cod with panko, parsley, & Dijon mustard with fries. ***Adapted from Women's Day 12/12-Their recipe is for 4 medium baking potatoes, 4 6-oz cod filets, and serves four. It also calls for a large rimmed pan. Theirs is served with a side of frozen peas, coked and mashed with 2 Tbsp prepared horseradish, and 2 Tbsp additional olive oil. **Also, use 2 Tbsp oil if using 4 potatoes**

Heat oven to 425 degrees F. On a rimmed baking sheet, toss potatoes with 1 Tbsp oil and salt and pepper. Roast for 12 minutes.

Combine bread crumbs, parsley, and 1 Tbsp oil. Season fish filets with salt and pepper.

Push potatoes to the edges of the pan and place the fish in the center. Spread the mustard over the fish and top with the bread crumb mixture. Roast until the potatoes are tender and the fish is opaque throughout, 10 to 12 minutes more.
