Directions:
Bring coconut milk to simmer and stir in curry paste. Add all vegetables and cook at medium heat until tender. Just before serving, add in grilled chicken breasts which have been cut into cubes. Serve over rice and sprinkle basil leaves and peanuts on top for garnish.
