Directions:  
1
Bring potatoes to a boil in a large saucepan. Simmer until tender (about 15 minutes).
2)Drain potatoes and place in the pitcher of a blender or food processor. Add remaining ingredients, reserving 2 Tbs of Parmesan cheese, and pulse until blended.
3)Preheat oven to 350 degrees. Drop potato mixture by Tbs onto non-stick baking sheet. Sprinkle the potato puffs with the remaining cheese and bake for twenty minutes or until slightly browned on top. Allow puffs to cool slightly before serving.
