Directions:

With a sharp knife, cut a shallow "X" into the bottom of each mushroom cap. Place the mushrooms, X-side up on a cooling rack set into a baking sheet and put in preheated oven.
2)Saute onion, sausage, and any usable mushroom stems (chopped) until sausage is just cooked through and onion is translucent.

Add Spinch and continue to cook until spinach wilts.

Add bread crumbs (reserving about 2 tsp. for garnish) and mix in the pan until all is combined

Transfer sausage mixture to a heat-safe bowl and add cheese. Mix well.

Spoon 1/4 of the mixture into each of the prepared muchroom caps top with a small sprinkle of bread crumbs.

Put mushrooms (filling side up) back into the oven until cheese is melted and bread crumbs are browned.

Serve with a simple side salad of spring greens, tomato, and vinegrette.
