Directions:

Place smart balance in hot Teflon-coated saute pan. Using tongs, add the scallops to the saute pan. Sprinkle scallops with red pepper flakes and black pepper on sides. Make sure the seasonings are distributed evenly on both sides of the scallops.

Saute for approximately 1 minute or until golden brown. Using a spatula, turn the scallops and saute until the other side is a nice golden-brown color.

In another pan, heat proscuitto with extra virgin olive oil. Add spinach and stir in remaining seasonings, 6 roasted garlic cloves, and lemon juice.

Place spinach on a plate and top with scallops, parmesan cheese, and lemon half.
