Directions:  
In large frying pan cook pancetta until crispy and set aside; cook chicken till nearly done in left over pancetta grease, set aside; add onions in remaining grease and cook till translucent, then add garlic and cook a minute longer. Add white wine now if desired and reduce to desired consistency.
