Put oil into pot and add onions, cook for 3 min then add garlic and spices for another 3 min. I didn't have coriander so used 1 tsp Masala spice which has coriander and fennel.
Add 1-2 cups water or stock as desired.
Chop apricots in 4 pieces each. Add remaining ingred and cook for 10 min.
