Directions:  
Peel jicama and cut into bite sized cubes.
Peel cucumbers then quarter them lengthwise and dice into cubes. If they're very mature, scrape out and discard the seeds first.

Toss everything together and taste for salt and lime.

Refrigerate until very cold.

I really dislike cucumber but I don't want lobster for lunch.

Jicama is a root that is eaten alot in South America and Central America. It's big, with smooth skin, and looks alot like a butternut squash in shape... If I'm remembering what it looks like!! It's got very firm, crunchy pale pink flesh. Very good for you!

i think im going to switch out the jalepenos for sweet peppers!! yummy :) and, what is a jicama???
