Directions:  
Mince garlic. Heat oil in a large skillet and add garlic and onion and cook until onion is soft, about 3 minutes. Add spices, stirring well to coat. Add shrimp, coconut milk and vegetable broth, lower heat and simmer until shrimp is cooked through, and no longer pink, about 3-5 minutes. Do not overcook or shrimp will be rubbery. Before serving, sprinkle in lime juice and season to taste with salt and pepper.

add a pinch of salt and a packet or two of splenda to make the curry & coconut flavors pop! serve over brown rice unless you eat it as is like a soup.
